I often get the craving for breakfast food for dinner. It’s usually German pancakes (a friend of mine taught me how to make this tasty eat). Sometimes it’s grease-ridden bacon and eggs.
The majority of the time I’m making my omelets with Egg Beaters or egg whites. Once in a while though I can’t fight the craving, and I figure that eating artery-clogging food once in a while isn’t so bad.
So I pull out the electric skillet and cook up a generous portion of bacon until deep golden brown and crispy. When that’s done, in go two eggs. I’m guilty of yolk breaking, and even though the bacon itself is salted, I can’t pass up sprinkling on some kosher salt and fresh ground pepper.
If you’ve never had eggs cooked in bacon grease you’re definitely missing out. Then again, maybe you shouldn’t try them – they’re quite addictive.
